About me

Thea grew up between a Greek kitchen in Chicago and the cellar of a family restaurant, where she learned to tell a vintage by smell before she could read a label. She trained properly later, passed the hardest exam in her field and opened a wine bar in the West Loop with a friend.

The bar is polished and warm, but the cellar is her real home. Stone arches, wooden racks, a round table with two glasses and a heater that has never quite worked. She takes her favorite guests there, at the end of the night, to taste what is not on the list.
